I must add that they all work perfectly when using the standard PMDG 737-800 NGX..........

The latest PMDG update restored all my controls.....

This problem is easy to solve. Simply open up your P3D, load a new flight with the NGXu, then make some changes to the simulator using the FMC (such as 'pausing at top of descent' or changing startup to cold and dark). Then exit the simulator and your options.ini file will have been created.
